There is an instrumental song in the series I've been trying to find that exists in episode 15 ('Sea of Wind, The Shore of the Maze', also known as the first chapter of the Taiki story arc).

It plays during the time that the Mt. Hou attendants and the kirin "Renrin" (i.e. the Kirin with the bracelet that opens a portal between the two worlds) have Sanshi reach through the portal to Japan and grab Taiki from his backyard. The music sounds sort of celtic-ish (I have no other way to describe it) and is fast paced.

If anyone could help me on this one, I'd be quite grateful.

This is most likely either "Fuushun" or "Ruika", since these two celtic-sounding songs are basically introduced in this arc. "Fuushun" is on the Twelve Kingdoms OST, while "Ruika" is available on the Twelve Kingdoms: Kokyu Memories soundtrack.

Now that I've thought about it, the song you're looking for is "Fuushun". It's been some time since I've seen this series. I need to rectify that.
