Anime series? Hmm. . . The one's I like the most, other than "Juuni Kokki" and in no particular order, are: "One Piece", "Serial Experiments Lain", "Now & Then, Here & There", "Berserk", and the first "Rurouni Kenshin" OAV series.
"One Piece" is simply a hell of alot of fun to watch.

I found myself addicted since the first episode and it hasn't faltered for me, yet.
"Serial Experiments Lain" is a mind-job of the best kind. Very deep, dark, and otherwise thought-provoking.
"Now & Then, Here & There" is one of the most brutal animes I've seen. There isn't an excessive amount of violence, or anything like that. It's who the violence is committed upon and by that hits hard. My one complaint is the the soundtrack's composer seemed to rip so many melodies from the "Rurouni Kenshin" soundtrack, which he also wrote.
"Berserk"'s character development is what lured me to it. It's actually the same thing that's kept me loving "Juuni Kokki".
The first "Rurouni Kenshin" OAV series also presents quite alot of character development and shows us what is probably the most dramatic story of the manga. It's also a series where it is clear that the soundtrack and the animation were made perfectly for each other. While listening to the soundtrack I can easily recall many very specfic plot and action sequences.
For anime movies, I'd have to top the list with "Nausicaa of the Valley of the Wind". It's relatively old, but I seriously noticed very little in terms of age while watching it. There is a quality there that is hard to come by.
"Jin Roh: The Wolf Brigade" is another that I could not help but like. Many say that it was quite boring throughout, but the course of the story really shows us that the stereotypes applied to anime aren't always true.
I haven't read alot of manga series, but "Berserk" hasn't stopped yet and I certainly won't stop reading it until it does.
"Battle Angel Alita", aka "Gunnm", is another that simply rocks. The "Gunnm: Last Order" series doesn't seem to be quite of the same quality, though. . .
"Nausicaa of the Valley of the Wind", like the anime, is a masterpiece -- even more so, IMHO. It took over a decade to complete and was well worth the time.

I've seen the first couple of episodes of this. It seems really... ... ...cute.

Does it stay as a "slice-of-life" comedy or move into other territory?

Well, I like a lot of anime. Juuni Kokki is just my most recent obsession series. ^_^ Let's see, other series I like....
Fruits Basket - Love the characters and the interactions. It's a very sweet story without being overly sappy. Still in the process (very slow) of reading the manga.
Saiyuki - Wonderful story and excellent characters. Also lots of pretty, which is a great bonus. I kinda wish that the entire second half of the series wasn't filler (it's a good filler story though!), but that's only because the manga story is so much better.
Puchi Puri Yuushi - This is just a fun, cute series. Very magical girl and very sweet, although I've got to wonder if it's going to get trippy later on, given the studio it's coming from....
Rose of Versailles - And this would be my nod to the old school group of series, as it was originally aired in '79/'80. The animation style is a lot like that of Utena, at least as far as facial structure of the characters goes. Story gets kinda cheesy, but that's almost expected from series produced in this era.
Wolf's Rain - I like the characters and the story. It's a rather unique concept, and I think it's been well-executed so far. Although I do wish they'd get on with the story...recap is fine, but not this much.
Matantei Loki Ragnarok - Another recent obsession series for me, if only because I like all the Norse mythology they're throwing in, and I'm surprised that they've been following things as closely as they have. Admittedly they've had to change some things, but for the most part....yeah.

Oh yeh shadowbard i agree Fruits Basket is one of the best animes i've seen.
It was also voted the No.1 best anime in 2001 in Animage (longest run of japanese anime magazine)
I really hope they continue with another season of Fruits Basket.
I recommend Fruits Basket to everyone!!!!!!!!!

Someone asked Daichi (FB director) about this at Fanime, and he apparently replied pretty much in the negative about this. Plus, the anime-only plot points (Akito's relation to the curse) introduced at the end of the anime and the omission of a couple of running manga plot threads from the anime might make it tricky to do a season 2 properly. OTOH, there's a rumor going about AoD & ANN about the FB manga getting picked up by TokyoPop....

Personally, I recommend episode 23 of Fruits Basket to everyone...

Here and There, Now and Then.
Berserk.
Haibane Renmei.
Noir.
Currently watching Tenshi na Konamaiki, which is ..err okay.. I guess..
To recommend something that others havent..well..
I guess Kimagure Orange Road is always worth a look..tad old but worth watching..also two movies, one which is kinda newer..

Tenshi na konamaiki aka A Cheeky Angel. The animation isnt that great but the humor is top notch. Some people will recoil and not like it just because of the animation...which is ashame for them its a really good show.

Record of Lodoss War: good ole fantasy-stuff....
D.N.Angel: Some mysterious phantom-thief (Dark) steals precious art-objects to seal the demons that inhabit them. Combined with a strange love-story... His opponent is some angel-like clone of him...

Hi!
Well, I don't believe I'm the oldest here, but it seems I like in general older stuff
Must be because a lot of it was shown on TV in Germany when I was growing up...
Some of my Favorites of OLD:
- Attack No. 1
- Rose of Versailles (watched it EVERY day...)
- Oraa Guzura Dado TV Series 2 (German: "Ollies Total Verrückte Farm")
- Galaxy Express 999
- Area 88 (SHAME on Central Park Media and all of their descendants for only putting Episode One of Three out on DVD, which makes no sense alone!!!)
of newer stuff, I enjoy:
- Wedding Peach (Yeah, it's Sailor-Moon-Clonish, but who cares

)
- Vampire Hunter D - Bloodlust
- Sorcerer Hunters
- RahXephon (Yeah, it's an EVA-Clone - but WHO CARES!

)
- NGE (Standard...)
- Jungle de Ikou
- Of course JK!!!
---
edit: Waaah, me bad...forgot two of my favorites, which shouldn't be forgotten (at least I think so...) !!!
- Slayers (all three TV Series...the OAVs and Movies weren't as good...)
- Silent Möbius TV! GREAT Series!!! Love it!!!
I also like watching J-Drama, atm watching GTO, You're under Arrest and Yamato Nadeshiko...
---
What I wished for: That they make a DECENT "Angel Sanctuary"-TV-Series, somewhat closer to the manga, and don't leave it at this horribly cut three-part OAV...but that's not gonna happen *sigh*
Greetz,
Shilahr

Other animes? Let's see...all time favorites follow really.
Fruits Basket - Adorable
Azumanga Daioh - Again, cute and adorable. XD
Slayers
Initial D
Hajime no Ippo
Hrm...there are probably others. But I can't really think. I prefer manga really anyway. Oh, Juuni Kokki is an all time favorite as well but the thread was about others haha.
As for some of the more recent stuff (last year or so) I took a liking too...hrm.
Full Metal Panic
Scrapped Princess
Matantei Loki Ragnarok - Actually, it's annoying me lately >_>
Wolf's Rain
I have to say, I wasn't really impressed with much of the stuff that came out this year. Most of the shows I watched were utter crap. Especially recently. Though actually, I just watched something called Hitsuji no Ita which was really interesting. It's apparently only a four episode OAV though.

humm...
other animes huh...
well most of mine have been mentioned, but here's a list anyways, i'll try to keep it short cause there are a heck of a lot that i really like...
JK (of course)
Fruits Basket
Azumanga Daioh
Onegai Teacher
Seikai no Senki (all 3 seasons of it)
Now and Then, Here and There
Sai Kano (can't believe no one mentioned this one

)
Kare Kano
GITS:SAC
Last Exile
RahXephon
Macross Plus
Macross Zero
and Sheep's Song seems quite interesting so far, only one ep
and that's all i can think of right now, but there are a heck of a lot more trust me...
for the most part i really like the ones with deep plots and good character development, but there are some that i still like that don't really have that much in them, and there are the classics too like Robotech, Eva, and Love Hina, those are classics and were really great for their time...
I know some of you may say that Love Hina isn't that great, but if you think of it for it's time then it's really good and not over done and dead cause Love Hina's concept wasn't really over done at all in it's time cause it was really one of the first ones to do something like that and thus spawned the others, so you can't really say that it's all that bad cause it's style is old, cause you gotta think of the anime for it's time when it was first released. If yoiu think of Love Hina being released today then it wouldn't be as great, but for it's time it was new and simply one of the best then...
damn i do ramble and repeat a lot don't i?
anyways that's my two cents hope you enjoyed it
Edit: damn can't believe that i almost forgot bout Wolf's Rain, add that to my list of favs too, tho it's too bad bout the recaps and stuff, that and the fact that anbu and a-keep dropped it to my knowledge cause of license, so i just lost my source for the good subs
